Bedhead Kitchen: Mini Gluten-Free Friands

These mini gluten-free friands are a simple and yummy treat you can whip up in just 30 minutes. Whether you’re gluten-intolerant or not, they’re a breeze to make and even easier to eat!

No friand tin? No worries. This version uses a mini muffin pan for two-bite delights that are picnic-perfect for a birthday party or even just afternoon tea. Even better, they’re made with pantry staples, no fancy techniques or equipment needed. Just a mixing bowl, a wooden spoon, and a few minutes of your time.


 

Recipe: Mini Gluten-Free Friands

(Substitute plain flour if you're not gluten-intolerant)

Makes: About 24 mini friands

Ready in: 30 minutes

Ingredients:

  • Butter, to grease
  • Gluten-free plain flour, to dust
  • 195g (1½ cups) pure icing sugar, sifted
  • 75g (½ cup) gluten-free plain flour, sifted
  • 150g (1½ cups) almond meal
  • 1 tsp vanilla extract
  • 3 eggs, lightly whisked
  • 180g unsalted butter, melted and cooled
  • Icing, to decorate (optional)

 


 

Method:

1. Preheat oven to 180°C.

2. Grease mini muffin pans with butter and dust with flour.

3. Combine icing sugar, flour, and almond meal in a large bowl.

4. Add vanilla, eggs, and butter. Stir until well combined.

5. Divide mixture among prepared pans.

6. Bake for 15–20 minutes or until light golden. Let friands cool in pans for 5 minutes, then transfer to a wire rack.

7. Decorate with icing or icing sugar before serving (if you like!).
